Mac ‘n Cheese with Red Lentils


Yummy, comfort food which is super quick, easy, one-pot, economical and kids love it.

A perfect winter meal for the whole family that won’t break the bank.

Mac 'n Cheese with Red Lentils

  • 1 cup red lentils, rinsed well
  • 450g dried macaroni
  • 5 cups vegetable or chicken stock
  • 2 tbsp yellow mustard
  • 1 tsp onion powder
  • 2 tsp garlic powder
  • 2 tsp salt (to taste)
  • 2 cups grated cheddar cheese
  • 2 tablespoons grated mozzarella
  • 1/2 cup milk


Add lentils, macaroni, stock, mustard, onion powder, garlic powder, and salt to a large pot.

Bring to the boil and simmer gently for 10 minutes, stirring occasionally.

Add cheeses and milk, and mix until cheese is melted and smooth and enjoy!


HOT TIP: the red lentils disappear when they are cooked so your children's beady eyes won't notice them allowing for a good opportunity to get some extra nutrients into them!
