Ingredients

  • 1 cup red lentils, rinsed well
  • 450g dried macaroni
  • 5 cups vegetable or chicken stock
  • 2 tbsp yellow mustard
  • 1 tsp onion powder
  • 2 tsp garlic powder
  • 2 tsp salt (to taste)
  • 2 cups grated cheddar cheese
  • 2 tablespoons grated mozzarella
  • 1/2 cup milk

Instructions

Add lentils, macaroni, stock, mustard, onion powder, garlic powder, and salt to a large pot.

Bring to the boil and simmer gently for 10 minutes, stirring occasionally.

Add cheeses and milk, and mix until cheese is melted and smooth and enjoy!

Notes

HOT TIP: the red lentils disappear when they are cooked so your children's beady eyes won't notice them allowing for a good opportunity to get some extra nutrients into them!
